Spanish Chicken

What did you have for dinner last night? We had a version of Spanish chicken that was healthy and delicious, so I thought I'd share my recipe with you. Best of all, it's also easy and doesn't contain ingredients that will have you scratching your head where to find them (or Googling them to find out what they actually are).

Are you ready? Here's what you'll need:

6-8 chicken breasts- sliced into small fillets, and then diced
1 teaspoon crushed garlic
Olive oil (about a tablespoon)
2 onions, diced
1-2 peppers, sliced thinly (any colour)
2 tins tomatoes 
Rice of your choice - as much as you like. I used a cup of Basmati rice.

Here's what to do.

Start cooking the rice (unless you're doing cauli-rice, in which case leave till the end). In a large pan, fry the chicken with a splash of oil, or olive oil spray. Add the rest of the ingredients - onions, peppers and garlic first, and when those have softened, the two tins of tomatoes. Grind black pepper into the pan and allow to simmer gently. 

When the rice is cooked, if your pan is big enough, add the cooked rice to the pan and stir the juices through. If you're using cauli-rice, add straight to the pan at the end. Yum - so delicious.

You can also add other flavours, if you fancy - I like the simplicity of the tastes above. But herbs like origanum, thyme, basil will be great. Or spice it up with chillies and coriander.
